Tarta de Santiago

Ingredients for 8 persons

350g de harina (plain flour)
8 huevos (eggs)
250g de matequilla (butter)
250g de almendra molida (ground almonds)
250g azucar (sugar)
margarina

preparation
1. batimos los huevos con la matequilla y el azucar por espacio de 20 minutos.

Whisk eggs, butter and sugar for 20 minutes

2. se anade la almendra molida y colocamos toda la pasta en el molde que previamente se ha forrado con una basede harina, margarina y huevo

fold the almonds into mixture gently. and spread evenly in the flan tin

3. lo introducimos en el homo durante unos 30 minutos hasta que cueza y se dore por encima

bake for 30 minutes until top of tarte is golden brown.

4. una ves fria, la desmoldamos, se decora con azucar fino por encima, y ya esta lista para servir.

cool in the tin. sprinkle top with icing sugar. ready to serve 8 persons.

The tarte is delicious and a speciality of the Galicia region. I have translated the recipe which was in Spanish from a postcard...hope it works!
