| Lentil Soup
7 and half cups of water
2 large carrots
1 tablespoon of miso
1 clove garlic
2 stalks of celery
half teaspoon of thyme
1 large onion
1.5 cups of red lentils
1 teaspoon oregano
1-2 tablespoons fresh parsley
1 teaspoon sweet paprika
half teaspoon sea salt
1 cup fresh corn (can use frozen)
Method
1. bring water to boil in saucepan
2. add garlic, onion, carrot, celery, lentils and miso. return to boil
3. add seasonings and mix well.
4. simmer covered over low heat for 60minutes (mixture should be mushy)
5. add corn and simmer for 5 minutes
6. stir in parsley
7. ready to eat..delicious!
